Green
tea was all the rage at the St. Louis World's Fair of 1904. An association
of Indian tea producers established a special pavilion at the fair
staffed with exotically dressed servers to help promote and popularize
Indian tea. An Englishman, Richard Blechynden, was charged with
making Indian tea a success. The Midwestern summer weather was a
scorcher and a steaming brew was the last thing sweltering. In desperation,
Blechynden poured his tea into glasses full of ice. It worked! People
came back for more. They carried the taste for it back home with
them. Thus was born a new American drink - iced tea.
